Coriander Crusted Pork Loin

This is an easy and healthy way to prepare pork.  Tenderloin is great because it is one of the leaner cuts of pork.  It does however, suffer from an identity crisis and needs some spicing up.  This recipe is for a boneless piece of meat.  You could also double the ingredients and make a bone-in roast.  You will just have to increase the amount of cooking time.  This is where one of those digital thermometers with the probe comes in handy.

Coriander Crusted Pork Tenderloin


  • 1 pound pork tenderloin
  • 2 teaspoon Dijon mustard
  • 1 tablespoon coriander seeds, crushed
  • 1 teaspoon black peppercorns, crushed
  • 1 tablespoon olive oil
  • kosher salt


Preheat oven to 425 degrees F.

Spread the mustard evenly over all sides of the pork; sprinkle with the spices, pressing down so they adhere.

Heat oil in a large oven-safe skillet over medium high heat; brown the pork three minutes per side. Place pork in oven and roast until an internal meat thermometer reads 145 degrees F, about 15 to 20 minutes. Let rest 5 minutes, then slice thin; season with salt and serve.
