Six Chicken Spice Rubs

A quick and easy way to spice up your boneless, skinless chicken breast is to rub it with a spice rub before grilling. Each of these makes enough for 4 6-ounce breasts. There is no need to wait, just rub on and grill until cooked through.

Black Peppercorn

Combine:

  • 1 tablespoon whole black peppercorns
  • 1 tablesspoon fresh oregano leaves
  • 1/4 teaspoon salt
  • 1 garlic clove

Process in a mini chopper or mini food processor to desired coarseness.

Juniper

Use a spice grinder to combine:

  • 2 teaspoons juniper berries
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1 bay leaf

Process until finely ground. Add the mixture to:

  • 2 tablespoons olive oil
  • 6 minced fresh sage leaves
  • 1 minced garlic clove
Malasian Curry

Combine:

  • 1 tablespoon vegetable oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon Madras curry powder
  • 2 teaspoons minced fresh cilantro
  • 1 teaspoon grated lemon peel
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
Mexican Mole

In a small bowl, stir together:

  • 1 tablespoon water
  • 2 teaspoons instant espresso powder

Once the espresso powder is dissolved, stir in:

  • 2 teaspoons smoked paprika
  • 1 teaspoon unsweetened cocoa
  • 1 teaspoon ground cumin
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
Moroccan

In a small bowl, combine:

  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon freshly ground black pepper
Southwestern

In a small bowl, combine:

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle chile powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon

    I chose the Southwestern spice mix — love the combination of the spices; especially, the cinnamon. I plan to make more of these mixes. Nancy : )

    I tried the Southwestern spice mix. It was good, but my husband didn’t like it very much. I have a feeling that the black peppercorn one will be a bigger hit. I love that you have given so many options for different tastes. I’ll be trying the others soon because I always have boneless skinless chicken breasts in my freezer. Thank you!
