My husband’s favorite meal is Thanksgiving. He’s from Colombia and they do not celebrate it there. I was my husband’s first. I may not be his first wife, but I made his first Thanksgiving dinner. I like to do it different every time. We also have it throughout the year, not just at the end of November. This recipe was pretty scary because, I don’t know, it just seems weird to put chili powder in sweet potatoes. I probably used a little more chili powder and I did sprinkle some on top for garnish.
Chili Spiced Mashed Sweet Potatoes
- 3 1/2 pounds sweet potatoes
- 1/2 cup fresh orange juice
- 2 teaspoons orange zest
- 2 tablespoons brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoons chili powder
- 1-2 tablespoon butter
Preheat oven to 425 degrees F. Bake sweet potatoes until soft, about 70 minutes. Remove from oven and let cool slightly.
In a small bowl, whisk together orange juice, zest, brown sugar, 1/4 teaspoon salt, cinnamon, and chili powder.
Scoop out the insides of the sweet potatoes and place in a larger mixing bowl. Add butter. Pour the orange juice mixture over the potatoes, mash, and serve.
