Grilled Fish with Macadamia Nut Butter

We are right in the middle of the famous Zaar World Tour and I volunteered to do a cooking challenge involving making something that was gluten-free on the barbie.  Yes, we are virtually visiting Australia/New Zealand!  I sort of cheated and used a recipe from the cookbook that was already tagged as gluten-free, but hey,…

Spicy Grilled Shrimp with Quinoa Salad

It’s grilling season! We joined Sam’s Club just to buy a particular grill I had my eye on. We’ve been wanting one of those hybrid grills with both gas and charcoal. I found a really cool one with that and a smoker box and a searing thing-a-ma-bob! It has pretty good reviews online, so I…

Lobster Ravioli

This recipe is a bit of work and time consuming to prepare, but well worth it.  To save on time, wonton wrappers can easily be used in place of the ravioli dough.  To save money, imitation lobster and crab meat are surprisingly good substitutes and taste great!

Seared Scallops with Fennel

I had forgotton how much I like sea scallops, I suppose because they are so expensive that I rarely buy them.  I did, however, indulge, but that was when superstorm Sandy hit.  Luckily for me, even though we lost all power, we still had gas to cook with and hot water!  So, while the storm…

Grilled Salmon

Grilled salmon is great because it cooks so fast and is very easy and forgiving.  It comes out equally well on an outdoor grill as well as an indoor grill pan.  Barring either, just an ordinary skillet will work well too.

Chile Shrimp with Butter Beans and Couscous

Hmmm.  Beans and shrimp.  It just might work.  I thought this was an odd combination, but had to try it.  Especially since I eat beans and whole grains at least 4 to 5 days a week.  It is reminiscent of Shrimp and Grits.

Cod with Creamy Pea Puree

I live on Long Island so you’d think it would be easy to obtain fresh seafood. Not so!  At least I haven’t been able to locate the mythical fresh seafood store yet. Last time I bought cod it seemed okay, but by the time I re-heated it at work – wee lets just say –…

Make Your Own Wontons

These are better than takeout. This recipe is for shrimp wontons. You can eat them as is, fry them and serve with a dipping sauce, or drop them into broth for wonton soup.

Smoked Salmon with Yogurt and Capers

I’ve been teasing the mister all week with this dish. Today I finally broke down and made it for him. This is simple to make and would be good for breakfast, brunch, or a light lunch or snack.

Meen Molee

This dish is popular throughout India.  It may have it’s origins in Portuguese cuisine.  This is just one more way to serve fish that does not taste “fishy.”
