Sushi Rice

Makes 2 cups.


  • 2 rice cooker cups of rice, well rinsed
  • cold water, just under the 2 cup line
  • 4 tablespoons rice vinegar
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt


Cook the rice in a rice cooker with the water.

Meanwhile, combine the remaining ingredients, stirring to dissolve the sugar.

In a large bowl, combine the rice with the vinegar mixture.  Stir with a paddle or large spoon.  You’ll want to fan the rice to cool it, but be gentle so you don’t mash the rice.

Once cooled, cover with a damp cloth so it doesn’t dry out while you are using it.
