Ginger Pork (Shogayaki)

Serves 2.


  • 1/2 pound thinly-sliced pork loin (try to find paper-thin pork or cut it yourself)
  • salt
  • fresh ground black pepper
  • 1/4 onion
  • 1 clove garlic
  • 1-inch piece of ginger (about 1 teaspoon grated)
  • salt
  • fresh ground black pepper
  • 1 tablespoon oil
  • 1 green onion, chopped


  • 2 tablespoon soy sauce
  • 2 tablespoon mirin
  • 2 tablespoon sake
  • 1 teaspoon sugar, optional


Season the pork with salt and pepper.

Grate the onion, garlic, and ginger into a small bowl.  Stir in the seasonings.

Cook the pork in a non-stick skillet in oil.  Be careful not to overcook or undercook.  The pork should be golden brown on each side.  Once the pork is done, add the seasonings mixture.  Heat through and serve at once.
