You can read a full story here. This is a recipe for green beans from an old pamphlet put out by Imperial Sugar. I modernized it a little, that is unless you want to use canned green beans.
- 1/2 cup granulated sugar
- 1/2 cup vinegar
- 1 cup water
- 1 teaspoon pickling spices
- 1 pound green beans
- 1 small onion, thinly sliced
In a saucepan, combine sugar, vinegar, water, and spices. Bring to a boil then simmer, over lowered heat, 10 minutes.
Meanwhile, blanch green beans in boiling water for about 3 to 5 minutes, depending on personal preference, taking note that these are going to steep in the pickling liquid over night. Plunge the beans in an ice water bath to stop the cooking and still retain a bright green color. Drain and place in a bowl with the onions.
Strain the vinegar (pickling) solution over the beans, cover, and refrigerate overnight.
Drain the liquid and serve cold or room temperature.
